1. 200g self raising flour 2. 175g honey 3. 110g butter 4. 2 medium eggs 5. 175g sultanas 6. 110g glace cherries Method 1. Wash the sultanas and cherries to remove any syrup and dry them. Halve the cherries. 2. Line a 16.5 - 19.0 cm round cake tin with baking parchment OR grease well. 3. Pre-heat conventional oven to 160°C or 140°C if using a fan oven. 4. Cream the butter with honey until light and fluffy. 5. In a separate bowl, beat the eggs together and gradually add the beaten eggs to the butter mixture a little at a time, beating between each addition. 6. Sieve the flour and mix the fruit with it to ensure the fruit is dry. 7. Gradually fold in the flour and fruit using a metal spoon. 8. Add a little milk if necessary, to achieve a dropping consistency. 9. Put the mixture in the prepared tin and using the back of a spoon dipped in milk smooth the surface to produce a slightly lower centre. 10. Bake in the oven for approximately 1½ hours until the cake is firm and a skewer inserted in the middle is clean when withdrawn. 11. Allow to cool in the tin.
